This is our favorite  video tutorial on sourdough process. Chef Jacob uses a very unique way of kneading the dough, has good shaping instructions and uses a dutch oven baking method.

We found  this video by Tom of Hobbs House Bakery in the UK very helpful as it brings in a slightly different perspective, includes a mixer kneading process and baking in the oven straight on a baking stone.

This is an overview of a rye sourdough bread, mixer-knead dough, shaping instructions, baked on a stone.  Video includes instructions on creating a hearth baking environment in a home oven which is very important for good sourdough.
